Richard Miscovich's wood-fired oven classes focus on the special requirements of brick oven baking and cooking through hands-on and demonstration instruction. Capturing and utilizing retained heat, artisan bread techniques and production, firing schedules, heat window utilization, energy efficiency and oven management are explored.  Oven construction is discussed, including the proper amount of thermal mass for home or microbakery applications. Guided hands-on instruction take the student from simple ingredients to delicious and charismatic wood-fired oven cuisine: from pizza to hanger steak to old world sourdough to comfort food casseroles. A slide show presentation is available to illustrate different styles of ovens and the possibilities inherent in a wood-fired oven based business or lifestyle.
